Restaurant offers fusion menu for Chinese New Year.

NOBLE House restaurant is offering a good mix of traditional and modern Chinese dishes during Chinese New Year.

Oriental Group of Restaurant group executive chef/director Justin Hor has chosen dishes suitable for the festive season with each having a symbolic meaning.

“I use traditional or classic ingredients to create dishes in a modern way.

“For example, I added truffle to the vegetable version of yee sang but still maintain the taste by using plum sauce so it is not totally unrecognisable,” he said.

Hor added this would satisfy customers who prefer traditional or more modern Chinese cuisine.

At the media preview, chef Hor recommended the Crispy Iceland Cod Fish with Mandarin Orange Cube (RM18++ per person).

Stir-fried Shank’s Tendon with Seng Kua and Wax Meat.

The presentation itself was impressive with the cod fish placed inside a Mandarin orange with Mandarin orange cubes at the bottom.

Hence, it was not only pleasing to the taste buds but also to the eyes.

“I used Mandarin oranges as it signifies gold, making it a must-have during this festive season,” said chef Hor, who has 30 years of experience cooking Chinese cuisine.

The saltiness, sweetness and sourness were married perfectly in this dish.

Another highlight was the Stir-Fried Shank’s Tendon with Seng Kua and Wax Meat (RM58++ per portion which is enough for four persons).

“It is like eating jellyfish but thicker,” chef Hor said when describing the dish.

He said usually shank’s tendon was braised but in his version, it was braised and then stir fried.

The wax meat was sweet, making the tendon more flavourful.

An interesting dish was the Braised Boston Lobster with Shanghai Rice Cake and Kimchi (RM33 ++ per 100gm).

Kimchi makes the dish taste more spicy and sour.

“To make it easy on the palate, I added tomatoes” said Loh.

Although I am not a fan of kimchi, I found the dish tasty as the lobster was fresh and the kimchi added a nice tang to it.

Another dish worth trying is the Braised Stuffed Money Bag with Dried Oyster and Fatt Choy (RM48 ++ per portion).

Noble House restaurant is also offering Chinese New Year gourmet sets that range from RM999++ (per table of 10 persons) to RM4,988++ (per table of 10 persons).

The Chinese New Year menu will be available until Feb 18.
