Serving more than 100 dishes from starters to desserts with five rotating menus, Mosaic chef de cuisine Raymond Abou Rjeily said each dish was personally prepared by the hotel?s chefs.
“We serve authentic cuisine to ensure that our food is of the best quality.”
“The international buffet caters for local and international patrons. Diners should also try our Ramadan highlights,” he said.
There are five live interactive cooking stations, namely the tandoor, grill, wok, noodles and dessert bar.
The buffet includes the Indian corner, Malay corner, cold station, as well as a wide variety of starters.
Mosaic restaurant boasts an elegant interior which reflects the Peranakan culture, offering a soothing dining ambience.
The crab meat salad with celery, which is available at the cold station, is perfect as a starter with its mild and refreshing taste.
There is also an assortment of sushi, oysters and salmon served at the station.
The peppered mackerel is delicious and has an intense flavour.
I tried the crushed potatoes with basil leaves and Kalamata olives from the grill corner.
It was very appetising and will suit diners who want a taste of Middle-Eastern cuisine.
As Malay Kitchen sous chef Kamarudin Dali accompanied us during the food review, he generously dished out his exquisite beef rendang which was served with lemang.
The beef rendang was cooked using 20 different ingredients, including various spices and dried chillies, shallots, coriander seeds and brown sugar, to give it a perfect taste.
“I also added gula merah to give the dish a hint of sweetness and colour,” he said.
The beef rendang was indeed the highlight of the evening. The aromatic and succulent meat went down very well with the lemang.
The chicken, salmon and lamb tandoori are also some of the not-to-be-missed dishes.
Kamarudin, who handles the preparation of all the Malay dishes at the hotel, said those who like eating fish should try the salmon tandoori.
The coconut and mango sorbet provided a tasty finish to the meal. The dessert is also available in other flavours.
The restaurant will also be serving serunding ayam, pickled nutmeg, blanched chicken with local herbs, satay, braised beef in lemongrass and turmeric, basmati rice, pineapple curry, salted fish cooked in coconut and eggplant sauce, claypot bubur pulut hitam and chilled rock melon puree with palm seed during the buffet.
The buffet is priced at RM138++ per person and is available until Aug 10 at Mosaic, from 6pm to 10.30pm.
It is also available at the newly refurbished Diamond Ballroom.
