WHEN chef Siti Arini Darsom started working, all she did was spend endless hours in the kitchen trying to perfect a dish that she had watched on television or read about.
The 32-year-old said the kitchen in her home was too small for her, hence she would go to work early and stay in the kitchen where space, ingredients and utensils were easily available.
Siti Arini now works as sous chef for the fairly new Best Western Premier at Dua Sentral in Kuala Lumpur.
The Selangor-born chef who heads Grill 582, a Western restaurant in the hotel, was quickly put in charge of this year’s Valentine’s Day menu.
Previously trained in French cuisine, chef Siti Arini said she was more familiar with dishes from the country.
She started off her special menu with the Carpaccio of Tuna with Edamame, Mizuna Salad and topped with sesame dressing which was refreshing and light.
It was followed by a soup of Mushroom Consomme with Lobster and Truffle oil before she dished out the sweet White Grape Granita. For the main course, we got to choose from three different dishes, namely the Oven-baked Australian Lamb Rack with Ratatouille and Baby Potato, Roasted Spice Duck Breast with Puy Lentil Ragout and Blood Orange Sauce and Sole Florentine with Whipped Potato, Beetroot and Buttered Honey Pea.
I went with the roast duck while my colleague Fifi opted for the lamb. Both dishes were carefully prepared by chef Siti Arini who was assisted by her helpers.
Since the restaurant had an open kitchen concept, we could peep at what the team were up to as we sat and waited for our next dish to be served.
According to chef Siti Arini, the duck was also flown in from France as it was more succulent and juicy compared to local birds.
“Everyone asks why I am serving duck as a main course because you rarely see it on the menu, but I think duck is really tasty if it is prepared properly,” said Siti Arini.
For desserts, guests can choose to have either the Warm Chocolate Cake or the Heart-shaped Pavlova with Cream Chantilly and Fresh Berries.
The set priced at RM240++ per couple is only available on Feb 14.
It comes inclusive of sparkling, red or white wine. Guests can also opt for fresh juices or soft drinks. A special door gift also awaits couples.
