EVERY Chinese New Year is a special occasion for Hilton’s head chef Lee Kok Sing as he strives to bring new dishes infused with ingredients rarely found in local cuisines.
This year, Lee, who is attached with the hotel’s Chinese restaurant Toh Yuen imported Dendrobium Candidum, a wild orchid species from China.
“It is a very popular and sought after herb especially in the southern provinces of China. The people there use it for its medicinal benefits and it is usually cooked in soups,” said Lee.
Some of its known medicinal benefits include improving ones complexion, as an anti-ageing agent as well as a soothing herb for the body.
For the restaurant’s Chinese New Year menu, Lee spent six hours to prepare the special Double Boiled Chicken Soup using the herb.
During the review, we tasted the Fortune set which started off with the Fatt Choy Hokkigai Yee Sang.
“Hokkigai is a type of Japanese clam usually used for Sashimi and Cold Salads, hence I thought it will be suitable for yee sang,” said Lee.
The eight course menu moved on with Roasted Duck with BBQ Sauce, Steamed Cod fish with Soya Sauce, Stir Fried Tiger Prawns with Fresh Milk and Butter as well as a Chinese New Year must-have, the Braised Sea Moss, Mushrooms and Dried Oyster with Lettuce.
This set is priced at RM1188++.
For dessert, we each had a bowl of warm Braised Red Bean with Glutinous Dumpling. Besides the Fortune set menu, guests can also choose the Happiness set (RM888++) or the Longevity set (RM1388++). All sets are for a table of 10 persons.
For yee sang one can choose to have it with Abalone, Salmon, Sea King Prawns, Hokkigai or a vegetarian pick of Pear with Honeydew. It comes in three sizes and price starts at RM50 (small) to RM300 (large) and is available for dine in and take-away.
Upon purchase of any Toh Yuen’s Chinese New year set menus, one will receive a dining voucher that offers a 50% off on Beggar’s Chicken. The Beggar’s Chicken is only available after the Chinese Year promotion.
The prosperous set menus are available for lunch from noon to 2.30pm and dinner from 7pm to 10.30pm till Feb 28.
