THE vague reflection of a brightly-lit Petronas Twin Towers on one of the buildings opposite Cascada Restaurant and Bar in Mandarin Oriental Kuala Lumpur makes it a somewhat romantic escapade for modern couples.

The modern skyline complementing the relaxing ambience of the poolside restaurant is perfect for couples to celebrate Valentine’s Day, and Cascada junior sous chef Davian Barum Santang vows to surprise couples with a four-course Poolside Dinner Menu.

Teasing the palette with the amuse bouche is a plate of marbled foie gras terrine with black truffle and 12-year-old balsamic or apple beignet.

Not a big fan of foie gras, I found the marbled delicacy too big portion-wise and its taste too strong for a starter.

Diners can also indulge in the Soda Bread and Tsarskaya Oyster or Caramelised Calamansi.

Next on the menu was the Lobster Ravioli and Vegetable Diamonds, served with the chef’s special shellfish bisque.The lobster ravioli is served with shell fish bisque and vegetables.

Santang said he used lobster from the US, prawn and Ricotta cheese for the ravioli’s fillings.

“The ingredients for the bisque includes tomato paste, celery and potatoes.

“I baked the lobster, prawns and crab shells for an hour, roasted it and cooked it with the vegetables.

“It was then brought to a boil and simmered for one day to reduce the heat,” he said.

The lobster ravioli was a perfect match with the intricately cooked bisque as it was both appetising and tasty.

With cod fish on the menu, one can only expect the best from the premium fish, and the junior chef did not disappoint.

“The cod fish is imported from the US and I pan seared it before baking it for 15 to 20 minutes,” Santang said.

The fish was served with Osetra Caviar Beurre Blanc Sauce and fresh white butter sauce as well as a thinly sliced potato crust and asparagus.

The taste of the fish was delicious when eaten with the sauce, and the potato crust gave a burnt aftertaste that complemented the fish well.

The dessert – iced vanilla cupcakes with vanilla macerated strawberries – offered a good end to meal.

The vanilla ice cream matched delightfully with the strawberries and couples can have a choice of tea or coffee to complete the meal.

The dinner menu is only available on Feb 14, from 7pm to 10pm.

It is priced at RM428++ per couple.

Couples can also opt for the RM576++ package, which is inclusive of two glasses of Moet and Chandon champagne. Both packages include a gold chocolate bow with two heart-shaped chocolates and a stalk of rose.
