- Wholemeal Roll:
- 420g Wholewheat Flour
- 25g Sugar
- 6g Instant Active Yeast
- 5g Salt
- 250ml Anchor UHT Milk
- 1 Egg
- 80g Anchor Unsalted Butter
- Matcha Roll:
- 100g All Purpose Flour
- 200g Bread Flour
- 150ml Anchor UHT Milk
- 7g Sugar
- 5g Instant Active Yeast
- 3g Salt
- 8g Green Tea Matcha Powder
- 50g Brown Sugar
- 1 Egg
- 40g Anchor Unsalted Butter
- Egg Wash:
- 5ml Anchor Whipping Cream
- 1 Egg Yolk
Instructions
- For wholemeal roll, warm up the milk to around 30ºC. Add in Yeast and sugar. Wait for around 10 minutes for the yeast to rise and become frothy or bubbly.
- In a mixing bowl add the flour, yeast mixture, salt and egg. Knead until a dough is form and it doesn't stick to the side of the bowl.
- Add in the butter and continue kneading until a smooth and elastic dough is form.
- Allow it to rise, then punch down to remove all the bubbles.
- Divide it into 30 grams of dough each
- For matcha roll, warm up the milk to around 30ºC. Add in Yeast and sugar. Wait for around 10 minutes for the yeast to rise and become frothy or bubbly.
- In a mixing bowl, sieve together all purpose flour, bread flour, matcha powder.
- Add in the yeast mixture, brown sugar and egg into the mixing bowl. Knead until the dough is firm and doesn't stick to the bowl.
- Add in the butter and continue kneading until a smooth and elastic dough is form.
- Allow it to rise, then punch down to remove all the bubbles.
- Divide it into 30 grams of dough each.
- To assemble, working your way for the top of the tree. Place one round 30 grams of dough. This will be the 1st line of the tree.
- On the second line place two dough side by side. So on and so forth until u build your desired tree shape and size. Remember to alternate between wholemeal and matcha flavour.
- Allow to rise double in size and apply egg wash.
- In between the dough, cut the cheese slices and place it in between.
- Preheat oven to 180ºC and bake for about 15 minutes or until golden brown.
