Recipe Ingredient
- Mutton Haleem:
- 1.5 kg Mutton with bone
- 200g Ghee
- 3 Onions
- 2 tbsp Ginger garlic paste
- 100g Green Chilies
- 4 tbsp Lemon Juice
- Salt to taste
- Pulses or Lentils
- 100g Whole or Broken Wheat
- 50g Moong Dal 50 gms,
- 50g Red lentil / Masoor Dal
- 50g Split Pigeon Peas / Arhar Dal
- 50g Black Gram / Urad Dal
- 50g Rice
- For Frying:
- 3 Onions (large)
- 50g Cashew nuts
- Oil, for deep frying spices
- 1 no Cinnamon stick
- 2 no Black Cardamom
- 4 no Green Cardamom
- 5 no Cloves
- 5 no Kebab Chini
- 1/2 tsp Nutmeg Flower
- 10 no Rose petals
Instructions
- Take mutton and trim if any excess fat and thoroughly wash and clean the mutton.
- Slice the onions and slit green chilies and keep them aside.
- Heat ghee in a thick bottomed pressure cooker and add cinnamon stick, black cardamom, green cardamom, clove, kebab chini, nutmeg flower, and temper.
- Now add sliced onions to the tempered spices and sauté until translucent
- Add ginger-garlic paste and cook it till it releases oils from the side of the mixture.
- Add mutton chunks and mix everything well
- Now add salt to taste and slit green chilis according to your palate.
