- Dough:
- 1kg Bread Flour
- 10g Instant Dry Yeast
- 20g Fine Salt
- 30g Castor Sugar
- 600g Water
- 50g Olive Oil
- Sweet Fillings:
- 1 Banana
- 125g Anchor Extra Stretch Mozzarella Shredded
- 20g Anchor Colby & Cheddar Shredded
- Savoury Fillings:
- 60g Pizza Sauce
- 40g Pre-Cooked Minced Chicken
- 40g Drained Pineapple Tidbits
- 125g Anchor Extra Stretch Mozzarella Shredded
- 20g Anchor Colby & Cheddar Shredded
Instructions
- Place the bread flour, instant dry yeast, fine salt & castor sugar into a mixer & mix it by lower speed for around 30 seconds.
- Next, mix the water & oil into a jug then pour it into the dry ingredients. Mix it using lower speed until it’s slightly combines for around 1 minute.
- Change to medium speed & continue mixing the dough until it is smooth for around 5 minutes.
- Divide the prepared dough weighing 300gm/pcs.
- Let the dough rest inside chiller for at least 48 hours
- Flatten and stretch the pizza dough.
- For Sweet panzerotti, top it with banana cubes and both Anchor Extra Stretch Mozzarella Shredded and Anchor Colby & Cheddar Shredded.
- For Savoury panzerotti, spread the pizza sauce on the dough. Fill in with minced chicken, pineapple tidbits and both Anchor Extra Stretch Mozzarella Shredded and Anchor Colby & Cheddar Shredded.
- Fold it like Calzone or giant curry puffs.
- Heat oil until temperature reaches 180°C.
- Lift & place the shaped panzerotti slowly into the hot oil.
- Deep-fry it until golden brown on both sides, serve hot.
