THE “do it yourself” (DIY) concept appears to be a common feature in the Ramadan spread at Tropicana Golf and Country Resort, with several sections offering diners the option of customising their meals.

For example, the stock and ingredients for the Ekor Lembu Duda, Urat Keting Sekuat Badang and Gear Box Kambing soups are served separately.

That allows adventurous diners to have the lamb marrow with oxtail soup.

Straws are also provided for diners to better relish the marrow.

Other stalls that feature the DIY concept include the Nasi Kerabu Ulam Setaman, Rojak Kelantan with Thai Sauce and Ice-Cream Goyang, where diners can choose their own condiments and “shake” their own ice-cream.

The Nasi Kerabu Ulam Setaman is ideal for those who want a healthier option, as they can heap on the finely shredded herbs and vegetables such as bean sprouts, torch ginger flower, long beans and cashew leaves for this dish.

Palm Coffee House at Tropicana Golf and Country Resort will be presenting the Santapan 29 Malam (29 Night Meal) buffet for the 12th consecutive year.

Diners can expect to enjoy kampung-inspired dishes as well as the restaurant’s signature dishes such as gulai kawah, crispy apam balik and bubur lambuk.

New to the menu this year are the Nasi Arab Kambing Bakar, Nasi Kerabu Ulam Setaman, Sotong Raja, Rojak Kelantan with Thai Sauce, Pulut Kuning Diraja (top pic), Kari Telur Itik Sekandang and fried ice-cream.

“Our bubur lambuk is special as diners are recommended to have it together with one of the gulai kawah dishes,” said Tropicana Golf and Country Resort food and beverage manager Abd Razak Mohd Omar, adding that the options are Gulai Kawah Daging Tetel and Gulai Kawah Ayam Kampung Seremban.

“Our executive chef Lawrence Lim and his team have been preparing over 300 dishes daily, with a regular rotation of dishes from the main course section.”

Depending on the day, these dishes include Ikan Patin Masak Lemak Tempoyak, Sotong Masak Lada Hitam, Udang Bakar Madu and Ayam Panggang Serai.

Abd Razak said diners are attracted to the Ramadan buffet at the golf course because of its affordability and wide variety of dishes.

Tropicana Golf and Country Resort is able to accommodate up to 2,400 diners throughout Ramadan.

The dessert section offers local and Western options, from pastries, kuih, jellies, puddings and cakes, to Bubur Pulut Hitam, Bubur Kacang Hijau and Bubur Cha Cha.
