HAVE an intense craving for rendang? Head over to Parkroyal Kuala Lumpur to savour 12 types of the well-loved dish this Ramadan.
Each day, the chefs at Chatz Brasserie will cook 12 types of rendang, from all over the country, using a variety of meat including seafood and venison.
The dishes are Rendang Manis Puyuh, Rendang Kuning Paru, Rendang Berempah Rusa, Rendang Kupang Pedas, Rendang Ayam Lengkuas Sabah, Rendang Daging Tok, Rendang Kambing Kalio, Rendang Hati Johor, Rendang Ikan, Rendang Ketam, Rendang Ayam Nogori from Negri Sembilan and Rendang Daging Hitam Sarawak (top pic).
Executive chef Isham Ismail said this allowed customers to savour the various preparation styles.
“I learned that each dish has its own distinct flavour. We have the Sabah chicken rendang that is heavily influenced by lengkuas while the Negri Sembilan is spicy but we have made it to suit all taste buds,” he added.
The dishes are perfect with lemang as well as other local dishes on the buffet.
Keeping to traditional, Parkroyal has brought back the essence of kampung specialties in its Ramadhan Selera Kampung buffet this year.
There is the kerabu corner with the Pasembur Berlauk with rich peanut gravy, Kerabu Pucuk Paku, Kerabu Ayam Daun Kesom and Kerabu Jantung Pisang – an old village favourite.
Delve into the various ulam available including daun selom, pucuk ubi, nangka muda, pucuk pegaga and ulam raja that are perfect with savouries and pickles like Ikan Sepat Masin, Paru Goreng Sambal, Hati Goreng Kicap and Sambal Tempe Berkentang.
The Briyani Kambing, according to Isham is a must-have.
“We use ghee as well as condensed milk and tomato puree, making it rich and creamy.
“The spices alone are not enough to give the dish an overall balanced taste,” he said.
Another classic is the Sup Tulang – Isham’s own recipe which uses bone marrow to deepen the broth’s flavour.
Chatz Brasserie also has a variety of live stations, including grilled lamb, roti canai, murtabak and chappati that go well with vegetable dalcha and chicken curry.
Fish lovers can visit the grilled fish station for a range of dishes served with home-made sauces like assam, kicap pedas, Thai chilli and kalasan.
From the grill corner, diners can have their fill of tender chicken satay, perfectly marinated and expertly grilled alongside beef and lamb satay.
Ikan Masin Lemak Nenas, Kari Telur Ikan Sentul, Ayam Kuzi, Daging Kerutub and Udang Lemak Belimbing are just some of the dishes at the main section.
Ayam Percik, marinated a day earlier to allow the meat to absorb all the flavours of the marinade, is tender and appetising.
Simple Chinese dishes such as Chinese-style Seafood Foo Yong Egg, chicken rice and dim sum are found here as well.
For dessert, the kitchen has a variety of offerings such as ais kacang, ice cream, local kuih and freshly steamed corn on the cob.
The Ramadan Selera Kampung with a free flow of juices and soft drinks, is available from 6.30pm to 10.30pm until July 5.
The buffet is priced at RM128++ per person, RM208++ for two and RM298++ nett for three and RM392++ for four diners.
It is priced at RM95++ nett per person for five to 100 diners.
