BE TEMPTED with the wide spread of eye-catching, fragrant dishes in the Ramadan Buka Puasa Temptations promotion at Seasons Cafe, Grand Seasons Hotel Kuala Lumpur.

The kitchen team, led by senior sous chef Mohamad Fauzi Moktar, has created an array of 130 appetising new local delights to add on to their usual fare this Ramadan.

While they have so many dishes to highlight, first and foremost, I have to sing praises of their peppery Gearbox Soup.

The soup, which contains the bone marrow, ribs and bits of gristle, is full of flavour but also very spicy, making for a good starter to warm up one’s tastebuds.

Grand Seasons head chef Randy Liow said that the Gearbox Soup was double boiled for about eight hours to allow the soup to be saturated with flavours.

Of all the dishes Seasons Cafe is offering this year, the team puts the most hype into the nasi beriani gam, which is a specialty of Johor.

The biggest difference I could find in this briyani dish is that while some recipes call for the use of raisins, the team at Grand Seasons has gone a step further and used a full colourful selection of mixed fruit, like what you find in a fruitcake.

As someone who enjoys raisins to begin with, I found that the taste of the mixed fruits adds on a distinct variety in flavour to the rice pretty well.

As with any Ramadan buffet spread, things like the whole roast lamb at the carving station and the entire nasi kandar section is bound to be popular, Fauzi added, speaking from past experience.

Diners are bound to look out for the whole roasted lamb at the carving station.

Expect specialties from all states in the country, from curry laksa and Gurney Drive assam laksa up north, all the way to laksa johor down south.

This year, the team is also doing quite a number of live cooking stations – not just for the carving stations or noodle stations, but also for some of the desserts.

Fauzi said that some of the stations would prepare certain types of local kuih such asputu piring and their colourful selection of onde-onde à la minute, and there will be a station that grinds fresh sugarcane juice for diners.

To give the spread more of a muhibbah variety, the buffet line will also include selections of Western, Chinese, Indian and Japanese from their regular line-up.
