GOOSE liver or foie gras is indeed an acquired taste. But for the adventurous, this expensive delicacy is something to look forward to.

There are many ways of preparing foie gras but the one that will be served this Valentine’s Day at The Urban ,Hotel Istana is a real gourmet pleasure. The goose liver is pan-seared with crushed herbs and served with apricot chutney.

According to chef de cuisine Shahruzmizal Salleh, the real taste of foie gras is enhanced by the apricot chutney. The dish was rich in taste yet it was zesty and sweet-sour.

Next on the menu was the Port Au Jus and Passion Fruit Chip, Handmade Lobster Ravioli on Sweet Caramelized Onion served with Champagne Caviar Veloute Sauce and Drizzle Organic Olive Oil. This starter was truly delicious. Though served in a small portion, the sweetness of the caramalised onion enhanced the taste of ravioli.

The next course was the Lychee Sorbet infused with wasabi and basil seed served in a champagne glass. Who would thought the strong, hot wasabi could be taken with ice-cream? The wasabi was cleverly infused into the sorbet topped with a sprinkle of basil seed. The taste was smooth, making it a perfect starter.

There were two choices for the main course. For her, it’s the Oven-baked Farm Barramundi Fillet served with Braised Endive, Cauliflower Puree, Eggplant Relish and Shellfish Sauce. The barramundi fillet was fresh and has an almost sweet taste to it while the sweet juices from the braised endive and cauliflower puree imparted a certain lightness to the dish.

And for him, it’s the Aurora Lamb Rack on Crispy Roast Herb Potato Paired with Au Jour Vegetable and Thyme Infused Olive Jus. The lamb was air-flown from Tasmania, Australia. The meat was tender, juicy and well-done. This dish is definitely a good choice. Not only does it come in a generous portion but it was simply excellent.

For dessert, it was the Warm Chocolate Fondant with Mixed Berries and Chocolate Praline. This was definitely a sinful indulgence. The warm luxury, smooth Valrhona chocolate just oozed out in the middle of the fondant which looked like lava. It’s so delicious that you will scrape everything off the plate.
