ENJOY the romantic atmosphere and wholesome Italian food at Doubletree by Hilton Kuala Lumpur’s Tosca this Valentine’s Day.
Situated by the poolside on the 10th floor of the hotel, Tosca has set up the perfect Valentine’s Day cuisine for lovers to usher in this celebrated day.
Only available for a day, the Valentine’s five-course set menu has been specially put together by executive sous chef Eric Siew.
Start off the meal with the Ostriche di Kumamoto con schiuma di Prosecco e caviale Avruga. As rich as its name, the dish is made of Kumamoto Oysters, sea urchin, Prosecco espuma and Avruga caviar.
Next on the menu is the Salmone in tre mondi (Salmon in three styles); Salmon Agrumi Curato — citrus cured salmon with olive mousse and baby herb salad, Tartare di Salmon Affumicato — smoked salmon tartar with avocado mousse and tomato salsa and Salmon Scottato — seared salmon with apple and celeric stew with chives.
“I chose salmon because it is widely accepted. The dishes has Italian elements in them. The lemon-cured salmon has fennel in it and even the tartar are essentially Italian,” said Siew.
Lobster lovers will savour the next dish, Lobster Bisque with butter poached lobster and butter emulsion. The creamy soup is a perfect finish to the list of appetisers that are light.
“All the starters and appetisers are light dishes so I wanted something flavourful and the lobster was the perfect choice,” he added.
For the main course, diners can choose between the Controfiletto di manzo Wagyu alla griglia con agnolotti di manzo — grilled Wagyu sirloin with scamorzacheese, baby carrots and basil polenta or the involtini di pollo e ricotta con agnolotti di anatra- chicken roulade with spinach and ricotta with duck agnolotti, scamorza cheese, baby carrots and basil polenta.
The Wagyu beef is from Australia and agnolotti is the square version of a Ravioli ( a thin stuffed pasta dough).
Dessert is both easy on the eye and in the mouth, dubbed Panna Cotta di limoncello e mandarino, it is a dessert made up of Limoncello and mandarin panna cotta with raspberry sherbet, sesame croustillant and chocolate soil.
“Traditionally people use strawberries for Valentine’s Day but I prefer raspberries since it has a better, unique taste and since we are celebrating Chinese New Year, oranges are aplenty that would be ideal for dessert,” said Siew.
The five-course set menu is priced at RM170++ per person and reservations are advised.
The set menu comes with a glass of Prosecco cocktail and a special door gift.
