- 60g butter
- 1 tbsp shortening
- 100g soft brown sugar
- 1/4 tsp vanilla essence
- ½ a beaten egg
- Sift:
- 110g plain flour
- 1 tsp milk powder, sifted
- 1/4 tsp bicarbonate of soda
- 75g chocolate chips
- 20g ground almonds
- 25g raisins
Instructions
- Preheat oven at 180°C. Lightly grease two to three baking trays.
- Beat butter, shortening, sugar and essence till pale and light. Add the beaten egg to mix and stir in the sifted dry ingredients. Add chocolate chips, ground almonds and raisins; mix.
- Using a teaspoon, spoon out the mixture onto the prepared trays. Bake cookies in a preheated oven for 12 to 15 minutes or until cooked. Remove cookies onto wire racks to cool before storing them.
