Recipe Ingredient
- 150g butter
- 175g sugar
- 2 tsp grated lemon rind
- 1 egg
- 3 tbsp lemon juice
- Mix these ingredients together:
- 150g self-raising flour
- 150g flour
- 50g desiccated coconut
- 1 tsp cinnamon powder
- 1 tsp mixed spice
Instructions
- Cream butter and sugar. Add in lemon rind and egg and beat until light and fluffy. Add lemon juice and beat well. Fold in dry ingredients and mix well.
- Roll two teaspoons of dough into 5cm lengths then shape into crescents. Place crescents on greased baking trays. Brush lightly with beaten egg white and sprinkle with desiccated coconut.
- Bake at 170 ºC for 15 minutes or until golden brown. Leave to cool on a wire rack.
