Recipe Ingredient
- 200g yam
- 10g flour
- A pinch of salt and sugar
- 60g pineapple, sliced
- 60g green bell pepper
- 60g red chillies
- 1 soft tofu
- 10g oil
- 100ml sweet and sour sauce (tong chou)
- Sweet and Sour Sauce:
- 80g white vinegar
- 100g pin tong
- 60g tomato sauce
- 5 seen mui chee (sour plum, deseeded)
- 30g Lea Perrins sauce
- 2 slices lemon
Instructions
- To make the sauce, mix all ingredients for the sauce together and cook until sugar dissolves.
- Steam yam and mash it. Mix with flour, salt and sugar, and shape into a basket. Deep-fry the yam basket (fatt put) until golden brown. Set aside.
- Dice soft tofu and deep-fry till golden brown.
- Stir-fry pineapple, green bell pepper and red chillies. Add fried tofu and sweet and sour sauce.
- Place all the fried ingredients into the yam basket and serve.
