Recipe Ingredient
- 1 kg meaty beef bones
- 1 onion, halved
- 1 stick celery, chopped
- 150g carrots, chopped
- 2 bay leaves
- 1 tsp black peppercorns
- 2 litres water
- 2 litres water, extra
Instructions
- Combine beef bones and onions in a baking tray and bake in a preheated oven at 200 ºC for 40 minutes until bones are well browned and onions turn soft and brown.
- Put bones and onion into a deep saucepot. Add the rest of the ingredients. Bring to a boil, then simmer uncovered over a gentle heat for two hours. Add the extra water and continue to simmer uncovered for another hour. Strain stock before use.
