- 25gm butter
- 50gm onions
- 50gm white leeks
- 1 litre white stock
- 400gm peeled Russet potatoes
- 125ml cream
- Salt & pepper
- Chopped chives
Instructions
- Melt the butter in a pan.
- Add the peeled and washed sliced onions and leeks. Cook for a few minutes.
- Add the stock, sliced potatoes and seasoning.
- Simmer for 30 minutes.
- Liquidise the soup in a blender till smooth.
- Return to a clean pan. Boil again. Adjust the seasoning.
- Add the cream. Garnish with finely chopped chives.
