- 500g high protein flour, sifted
- 10g milk powder
- 100g castor sugar
- 1½ tsp instant yeast
- 1/2 tsp salt
- 270ml water
- 50g butter
- 75g raisins
- Glaze:
- 1 small egg, beaten
- 1 tbsp melted butter
Instructions
- Put sifted high protein flour into a mixing bowl. Add milk powder, salt, sugar and yeast. Mix well to blend. Add in water and mix with a dough hook on a low speed. Mix until a dough is formed. Add butter and mix until the dough is smooth and elastic.
- Cover the dough with a piece of cling film wrap and leave aside to prove for 50-60 minutes or until doubled in bulk.
- Add in raisins and knead the dough until smooth. Divide the dough into portions of 50-60g each. Roll out each portion into strips of about 20cm lengths. Take 3 strips and plait them up neatly.
- Put the plaited dough on to a lightly greased tray. Leave aside to prove again for 30 minutes.
- Spray lightly with water and brush the plaited dough with beaten egg. Bake in a preheated oven at 200°C for 15-20 minutes.
- Glaze the baked plaited buns immediately with melted butter and leave aside or serve the buns hot.
