Recipe Ingredient

  • 250g margarine
  • 135g icing sugar, sifted
  • 1 tsp vanilla essence
  • 1-2 tsp rum essence (optional)
  • 2 egg yolks
  • 1½ tsp chocolate paste
  • 80g semi-sweet chocolate chips
  • 50g ground almonds
  • 425g plain flour sifted twice
  • 25g cocoa powder
  • 100g chopped nuts (or any other nuts of your choice)

Instructions

  1. Preheat oven to 180°C. Grease several baking trays with melted margarine or corn oil.
  2. Cream margarine with icing sugar until light and fluffy. Beat in essence, egg yolks and chocolate paste. Stir in chocolate chips and nuts.
  3. Mix in the sifted flour and cocoa mixture. Stir in ground almonds to mix.
  4. Using two teaspoons drop slightly rounded teaspoonfuls of dough on the prepared trays allowing space between for spreading during baking.
  5. Bake for about 15-20 minutes or until lightly browned. Cool on wire racks before storing in air-tight containers.
