- 10oz. / 230gm.butter
- 7oz. castor sugar / 230gm. brown sugar
- 4 eggs
- B(mix well and sieve)
- 10 oz. plain flour /230 gm. flour
- 1 tsp.all spice powder
- 1/2 tsp. nutmeg powder
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- C
- 12 oz./340 gm. fruit mix
- 50 gm . raisins
- 50 gm . red cherries
- 50 gm .green cherries
- 50 gm .almonds chopped finely
- D
- 5 tablespoon or 2 oz. brandy
- 1/2 tsp. vanilla
- 2 tablespoon golden syrup
Instructions
- Cream butter and sugar for 4 minutes
- Add eggs one at a time. For each addition cream for about 1 minute.
- Fold in (B)
- When well-blended, fold in (C)
- Lastly add in (D)
- Pour into 2 loaf tins when well mixed. and bake at 180 degrees for 1/2 an hour. then cover with foil and bake until brown. (about 1/2 hr.)
