Recipe Ingredient

  • 1 Chicken - cut into bit sized
  • Lemon Grass (heong mau) - 2/3 stalks
  • Belacan
  • Asam (squeesh out 1 bowl of water)
  • 1 Green / Red chilies
  • A
  • Garlic, Shallots(cut & fried)
  • B
  • Kunyit Powder / Pepper / Salt / Fresh Wong keong

Instructions

  1. Marinate chicken with B & leave for a few hours
  2. Put in enough oil for frying A and leave aside
  3. Leave a bit of oil for frying the belacan & lemon grass.
  4. Put in chicken & fry till almost cooked.
  5. Pour in the assam juice & add in sugar, dark sauces
  6. Cover wok for a while & put in half the fried onions.
  7. When chicken is cooked, put in the chillies & bal of the fried onions. Serve immediately
