Recipe Ingredient

  • 600g mud crabs
  • 1 Tbsp cornflour
  • Dash of pepper
  • Enough oil for deep-frying
  • 300ml fresh chicken stock
  • 2-3 Tbsps oil
  • 1/2 tsp sesame oil
  • 1 Tbsp chopped garlic
  • 1 Tbsp chopped shallots
  • 1 Tbsp chopped red chillies
  • 1 Tbsp hot soya bean sauce
  • 1/4 tsp frshly cracked black peppercorns
  • Sauce Ingredients:
  • 2 Tbsp Premium oyster sauce
  • 2 Tbsp black pepper sauce
  • 1 Tbsp sugar

Instructions

  1. Cut crabs into halves, then rinse and drain well in a colander. Sprinkle with cornflour and pepper. Deep-fry crabs in hot oil until cooked through. Dish out and drain oil.
  2. Heat 2-3 Tbsp oil and 1/2 tsp sesame oil in a wok. Add garlic, shallots, soya bean paste and the rest of the sauce ingredients. Fry until fragrant. Pour in chicken stock and bring to a boil.
  3. Put in pre-fried crabs and stir well to mix. Cover the wok and bring to a simmer until gravy is thick and dry. Add in red chilli and sprinkle in freshly cracked black peppercorns.
  4. Dish out and serve immediately.
