- 175g margarine
- 85g wholemeal flour, sifted
- 145g plain flour
- 3¼ tsp baking powder
- 1½ tbsp milk powder
- 145g castor sugar
- 160ml soya bean milk
- 150g mixed fruits
- 1/2 tsp vanilla essence
Instructions
- Sift wholemeal flour, flour, milk powder and baking powder together. Return husks to the bowl. Cream margarine, vanilla essence and sugar until light and creamy.
- Add sifted ingredients, alternating with soya bean milk. Stir in mixed fruits to combine.
- Line patty tins with paper cup cases and fill the cases up to three-quarters full with the cake mixture.
- Bake in preheated oven at 200°C for 15-20 minutes or until cooked through.
