- 280g plain flour
- ¾ tbsp baking powder
- 100g soft brown sugar
- 15g dried figs, chopped
- 30g dried apricots, chopped
- 20g dried mangoes, chopped
- 2 small eggs, lightly beaten
- 100g melted butter
- 200ml fresh UHT milk
- ¾ tsp vanilla essence
Instructions
- Grease a 12-hole muffin pan and preheat oven at 200°C.
- Sift flour and baking powder into a bowl. Add sugar and dried fruits.
- Combine eggs, butter, essence and milk in a bowl. Pour mixture onto the dry ingredients and stir until well combined.
- Pour batter into prepared muffin pan until three quarters full. Bake for 20-25 minutes or until well risen and lightly golden. Serve muffins warm.
