Recipe Ingredient
- 120g margarine
- 110gm castor sugar
- 1 tbsp lime juice
- 250g bananas, mashed
- 1/2 tsp vanilla essence
- Sift
- 250g self-raising flour
- ½ tsp baking powder
- ½ tsp bicarbonate of soda
Instructions
- Line and grease a 20cm square or round cake pan. Preheat oven to 180-190°C. Beat margarine, sugar and essence till light and fluffy. Stir in lime juice. Fold in sifted flour.
- Add in mashed bananas with a metal spoon. Mix in gradually. Pour mixture into a prepared cake pan.
- Bake in preheated oven for 40-45 minutes or until cake is cooked through when tested with a skewer.
