- 220g mixed fruits, sprinkled with some plain flour
- 50ml brandy (optional)
- 300g butter
- 275g castor sugar
- 1 tsp vanilla essence
- 6 eggs
- 250g plain flour, sifted
- 50g self-raising flour
- ¼ tsp bicarbonate of soda
- ½ tsp mixed spice
- 1/8 tsp ground nutmeg powder
Instructions
- Line a loaf tin with a layer of brown paper and one layer of greaseproof paper or baking parchment. Grease the paper and lightly dust with flour.
- Combine mixed fruits and brandy together. Substitute brandy with orange juice, if desired. Stir well to mix and leave aside.
- Cream butter, sugar and vanilla essence until the mixture is light and fluffy. Add eggs one at a time, beating well after each addition. Sift in flour mixture to mix. Add macerated mixed fruits.
- Pour batter into prepared tin and bake in preheated oven at 170°C for an hour. Reduce the temperature to 150°C and bake a further 10-15 minutes or until cooked through.
