- Syrup
- 150g soft brown sugar
- 20g castor sugar
- 90g butter
- 150ml water
- 200g raisins
- 150g pitted dates, chopped
- 100g dried apricots, chopped
- Ingredients (A) - sifted together
- 150g plain flour
- 50g high protein flour
- ½ tsp bicarbonate of soda
- ½ tsp baking powder
- ¼ tsp salt
- 2 eggs
- 180g whole almonds, skinned
Instructions
- Line and grease a loaf tin.
- Combine both types of sugars, butter and water in a saucepan. Bring to a gentle boil to dissolve the sugars. Remove from the heat and add in all the fruits. Stir to mix well and set aside to cool.
- Add in the eggs and mix until well blended. Add sifted dry ingredients and stir well to combine.
- Pour mixture into prepared tin and arrange the almonds on top of the cake as desired. Bake in a preheated oven at 180°C for an hour or until cooked through when tested with a skewer.
