Recipe Ingredient
- 500g chicken, cut as desired
- 1/2 cup onions, onions
- 2 tbsp ginger, finely chopped
- 1 tbsp garlic, finely diced
- 5 tbsp ground coriander, roasted
- 2 tbsp black or white peppercorns, coarsely crushed
- 1 medium sized tomato, diced
- 1 green chilli
- 1/2 tsp turmeric powder
- 1/4 tsp cumin powder or whole cumin
- 1/4 tsp fennel powder or whole fennel
- 1 stick cinnamon
- 2 star anise
- 1 sprig curry leaves
- oil for frying
- salt
- 1-2 cups water or as desired
Instructions
- Heat oil over low heat, add onion, ginger, garlic and all the spices except the peppercorns and saute the masala till fragrant.
- Add chillii, tomato, curry leaves, salt and chicken. Coat chicken with the masala and add 1 cup or more of water and cook chicken covered. Salt to taste.
- When the chicken is done, add crushed pepper and serve immediately.
- Note: Adjust water and spice as desired.
