Strawberry and Vanilla Ice-cream Back

Want to do something different for your loved ones this Valentine’s Day? Why not make your own ice-cream? In this tutorial, you will learn how to make ice-cream using an ice-cream machine.

Milk Base (A) :

  • 900ml full cream milk
  • 220g sugar
  • 10g dextrose
  • 30g skimmed milk powder
  • 50g Dreidoppel tripanna (ice-cream stabiliser)
  • 400g dairy cream

Method for (A) :

Mix all the above ingredient; sugar, dextrose, skimmed milk powder and tripanna in a bowl.

Pour milk and dairy cream in a blender or bowl.

Blend/whisk in the dry ingredients with wet ingredients. Let it rest for 10 minutes before adding flavours.

Now, we will prepare the flavour for the ice-cream. Ingredients below are just for the flavours mentioned. Feel free to substitute the flavours.

For strawberry ice-cream (B) :

  • 400g milk base
  • 16g Dreidoppel pastarom strawberry paste

For vanilla ice-cream (C) :

  • 400g milk base
  • 16g Dreidoppel pastarom vanilla paste or vanilla bean

Method for (B) and (C) is the same

Pour the preferred paste into the milk base.

And whisk it until it is mixed well.

Then pour it into the ice-cream maker and it is ready for churning.

The churning process will go on for about 20 minutes. This will depend on the ice-cream maker that you are using.

You will know when the ice-cream is ready when the texture is like the above.

Remove from the machine. Garnish and serve sliced strawberries and chocolate sauce.

When it comes to ice-cream presentation, let your imagination run wild! Here are a few suggestions.

If you do not have an ice-cream maker, after mixing the milk base and flavour, freeze it until it is no longer watery but not frozen.

Then remove it from the freezer and scrape the sides of the mixture and blend it again. Once that is done, freeze it again until it is no longer watery but not frozen. Repeat this step once more. Then freeze the mixture until is frozen.
