Strawberry Dolce in a Glass Recipe by Chef Steven R. Selvamuthu of Pastry Pro

Chocolate topping Strawberry topping
Strawberry mousse
50g Fond Royal Vegetable (Mousse powder without gelatin) 75g water 500g whipped cream (35% fat) 25g Pastarom Strawberry paste
Method Topping
Pour strawberry topping and chocolate topping into a the glasses and spread out to the edges.
Strawberry mousse
Mix the mousse powder, water and stir in the paste. Fold in the whipped cream and pipe into the glass.
Chill in the fridge for at least two hours before serving.
Decorate with chocolate shavings and fresh strawberry before serving.
