Ingredients 4½ cups plain flour, sifted 1½ cups water 2¼ tbsp sugar 3/4 tbsp salt 1/4 tin evaporated milk 1 large egg 2¼ tbsp baking powder Pinch of bicarbonate of soda 1/2 cup oil
Method Combine milk, sugar, egg, salt, baking powder, bicarbonate of soda and water in a large mixing bowl. Mix well to blend then fold in flour.
Combine the mixture well until a dough is formed.
Stir in oil and knead until dough is soft and pliable. Divide dough into equal portions of approximately 100g each, then flatten the balls of dough with a rolling pin into pieces that are 1cm thick.
Deep-fry the pieces in fairly hot oil until puffed-up and golden-brown.
