Ayam Goreng Kalasan


    • 6 cloves garlic, ground
    • 6 tablespoons palm sugar
    • one 3lb chicken
    • salt and sweet soy sauce to taste
    • inch galangal
    • 1 cup coconut water
    • teaspoon baking soda


    Simmer chicken with all the ingredients until chicken pieces are tender and sauce is thickened. Add more coconut juice or water if necessary. Remove chicken from mixture and then deep fry until golden brown. Brush fried chicken with the sauce. Serve hot with rice and sambal belacan.
